The thermal breaker can be sort of hard to find. It is usually wrapped up into the wiring harness under the tape. So you are looking for a bulge. The thermal breaker is inside of a soft plastic pouch affair with 2 wire leads coming out of one end. In plugs into quick disconnect connectors coming out of the wire loom. It depends on the year of the Rhino as to where they put it. It can be over by the steering column by the outside of the firewall. It can also be in the wire harness behind the battery (inside of the battery box), I believe
The stock thermal breaker:
Replace with one of these guys on the right. Do not wrap up in a blanket, they need to stay cool.
You can snap off the excess length on the terminals and use insulated (female lug) spade terminals crimped onto the wires that you cut off close to the 'bag' on the old widget.
It is hard to say what current your new fan will draw upon startup. The inrush current can be significantly greater than the running current). if the fan cuts out quickly at startup you might need to bump up to 12 A or maybe even more.
