My rhino is a turd but shouldn't be what gives

I'm thinking you have to much carb for low end torque. Exhaust isn't helping either. After that I would double check cam timing. I have basically the same engine (bored/stroked/mudblaster). I've had Alba exhaust (no help on low - mid torque, only noise) and tried different jetting and airbox stuff (lost low end) Stock carb and exhaust on now and I can break 28" Zilla's loose most anytime I want.
